A vegan “red velvet” smoothie.
I find that I feel so much better when I default to regular healthy eating and exercise habits, and it also helps me feel less guilty about my many indulgences. This morning I’m drinking a smoothie with, yes, beets! Beets and chocolate actually go very well together and with this smoothie, you get a flavor reminiscent of red velvet cake with much more nutrition, none of the guilt, and none of the artificial colors. I occasionally roast beets in the oven then let them cool and peel them and slice them up and keep them refrigerated or frozen to add to dishes in a snap. These red beets were in my freezer. I blended some beets with cocoa powder, protein powder, chia seed, a couple of dates for sweetness with no added sugar, a bit of pomegranate juice, almond milk (you could use coconut milk or any milk you like really), and a bit of ice and touch of water (I’ve found that cold brew coffee also works well in this). Don’t be scared. It’s actually quite good.
